The town of Baeza is located in the geographical centre of the province of Jaén. Nowadays it is well known for its heritage of historical monuments, and it has been declared, along with Úbeda, a World Heritage Site by UNESCO and is one of the three sites of the International University of Andalucía.  It was a key point in the conquest of Al Andalus by the Christian kings. As a vantage point over the Guadalquivir, possession of the town assured the Castilian rear and threatened the kingdoms that were on the left bank. Its conquest was so important that King Fernando III, in 1227, decided that from that moment on the royal flag, which was later to become the Spanish flag, would include the crucifix or cross of St Andrew, as he attributed this miraculous conquest to the apostle’s intercession. For centuries, until Carlos III, it would be the distinctive symbol on Spanish flags, and even today King Juan Carlos bases his entire coat of arms on the Cross of St Andrew, on whose feast day, the 30th of November the town of Baeza was conquered. Three centuries later Queen Isabel I, fearing that the nobles would challenge her power, ordered its Alcázar to be knocked down, and only a few remains of this are left. Baeza forms an exceptional architectural unit, which has been declared a World Heritage Site. It is a Renaissance jewel in golden stone, set among olive groves and gentle mountains. The Olive Culture Museum built on what used to be a farm, will give us a better idea of the traditional way of making use of the “green gold”, as well as of the various varieties of olives.
